How do astronomers know that the center of gravity of the Moon is 2 kilometers away from its geometric center?

The center of mass is very precisely determined by knowing the exact orbit of the moon to better than (206256 x 2km/384400 km) = 1 arcsecond accuracy. The geometric center is determined by knowing the shape of the Moon.
