Have planets ever been observed to eclipse one another in the sky?

Not to my knowledge, although given enough time, there is no reason why this should not happen. It is quite common for planets to get within a few minutes of arc of one another every few centuries, but to get within a few arc seconds must happen no more often that once every few thousand years. Even modern forecasting programs probably are not accurate enough yet to determine exactly when these eclipses will happen.
